I love this show!!! I have to admit I am a Food channel freak!I want everyone who is reading this..to take notice..Look in your fridge and dig out all your staples...and tell me how many of them have in their 3rd or fourth ingredient catagory either sugar or it's diretive, and salt...NO Wonder we are such Freaks!!! I challenge you to go to foodnetwork.com and start making your own salad dressings and pasta sauces and everything man that you can...from scratch...there are not hundreds of ingredients to these recipes, and you will feel so much better and calmer with out all the "jack" in your system.

I like watching the good technicians though.
Alton Brown is a joke. Its essentially a professional wrestling match where the announcer talks like a ninny. Even the "chairman"...sigh. Dacascos isn't much of an actor. He's just not gay enough to pull it off.
You're spot on about learning technique though. I love that. You ought to try my chicken pot pie. Tell you what- you've had worse things in your mouth.
A friend's son who is a professional chef tipped me to scorching shrimp shells as a starter to building a rich stock. Fresh herbs help too.
I live for good knifework and the chemistry of cooking. And chile peppers. And chocolate, mangoes, citrus, bread...
Tonight- a savory tomato-onion pie with lots of garlic. Double crust.

I like Alton Brown, but not on Iron Chef, can't stand that show...

Its just so smarmy and self-important. The one good thing are the C-list actors who "judge". At least thats true to the original. I miss Yukio Hattori and the fortune teller.
